Paolo Franchi is the chef of the Castello Visconteo, a chef enthusiast of art and painting, simplicity and ancient flavors, who loves reinterpreting food with his unmistakable artistic touch.

Paolo, who counts on a long experience in the catering industry in Italy and Germany, loves dishes simple and not too complex that he is able to turn into real masterpieces for the eyes and taste buds.

In the chef's opinion, food must be a vehicle for emotions and memories, in connection between perfumes and tastes of the past and future trends, returning dishes able to surprise and celebrate the palate pleasures with uniqueness and intensity.
